Elida is one the top coffee estates in Panama. Half of the estate is located inside the Volcan Baru National Park, which is a nature reserve teeming with biodiversity. Volcan Baru is also one of the highest volcanoes in Central America, and depending on varying levels of altitude, there can be a total of 7 types of microclimates. The coffee is grown in a primeval forest that is shrouded in clouds all year round to provide an excellent shade-growing environment. There are also extended periods of rain that can last from May all the way to November, ensuring that there is abundant precipitation for optimal growth. On the other hand, adequate sunlight is available from February to early May. As coffee is cultivated from the very beginning of planting the seedlings, an even longer time of approximately 4 to 5.5 years (as opposed to an average of 2 to 3 years) is required before harvesting the coffee. In addition, due to the low temperature, the coffee cherries require another month before ripening. The culmination of the above factors result in the unique flavors of the coffee. The coffee species planted include Catuai, Caturra, Typica, Bourbon, and in the recent years, Geisha. The estate mostly uses the washing technique to process the coffee cherries with only a minority sun-dried.
